Quick, easy recipes on a budget

With a little planning, you can have tasty, healthy meals even on a tight budget. Some general tips to keep in mind:

Recipe of the Month - February 2012

Baked Oatmeal

Ingredients:

1 cup oil (can substitute butter or applesauce)
1 1/2 cups sugar
4 eggs
6 cups oats
4 teaspoons baking powder
1 teaspoon salt
1 teaspoon cinnamon
2 cups milk

Preparation:

-- Preheat oven to 375°.
-- Combine all ingredients in order listed. Pour into greased 9x13 pan.
-- Bake at 375° for 30-40 minutes until lightly browned. (Can be refrigerated overnight before baking.)
-- Serve topped with butter, brown sugar and milk.
